West African Peanut Soup
Ingredients list for 4 persons

1 onion
1 green pepper
1 carrot
2 tomatoes
4 garlic cloves
1 chilli pepper
750ml vegetable stock
4 -5 tbsp peanut butter (crunchy)
Salt and black pepper

West African Peanut Soup

Peanut soup - sounds very strange but it is a very satisfying and filling soup perfect for cold winter days.

Recipe:

Peal the onion, garlic and carrot. Cut all vegetables into small cubes and crush the garlic cloves.

Add some oil to a chefs pan and bring to medium heat. Add the onions and let them sweat for a few minutes, then add all the other vegetables; carrots, peppers, tomatoes, garlic and chilli pepper. Fry and stir occasionally for 5 minutes.

Add the vegetable stock and simmer for 15 minutes until the vegetables are tender.

Reduce the heat and add the peanut butter. Stir often and make sure that you don’t end up with lumps of peanut butter.

The soup should be thick and smooth.

Chefs Tip

Use crunchy peanut butter instead smooth.

Menu suggestion

Can be used for a starter (very small portion) or on its own with some toast or toasted rye bread.

Wine suggestion

A nice smooth red or white will work well.
