Wash the Pak Choi, mushrooms, spring onions, chilly and tomatoes. Peel the ginger and cut into slices. Peel and crush the garlic, top with olive oil and salt and leave to infuse. Slice the chilly, deseed the chilly if you don't like it hot.
Cut the tomatoes in half and slice the mushrooms. Cut the spring onions to small strips e.g. 3cm.
Start by Frying the tomatoes on a medium heat for about 15min. Then add the mushrooms, spring onions and olives.
Cut the pak choi in half and fry on a medium heat for about 5min, then add the crushed garlic and slices of chilly.
Now season the tomatoes and mushrooms with some salt and pepper.
In another frying pan fry the tuna steak on a hot heat for 1min on each side for fresh tuna and 2min on each side if you use defrosted tuna.
Assemble the dish. Start with the tomato mushroom mixture, place the 2 fried pak choi halfes on top and finally place the tuna steak on top.
Sprinkle with some olive oil and serve.
