Tarta de Santiago
Ingredients list for 1 cake

250g ground almonds
150g caster sugar
6 eggs; separated
1 lemon zest
1 orange zest
1 tsp cinnamon
Orange juice and optional brandy
Icing sugar

Tarta de Santiago

Fab almond cake without any flour and butter.

Recipe:

Mix the almonds with lemon and the orange zest; best with fork.
In another bowl mix egg yolks with sugar and cinnamon.
In another bowl beat the egg whites.


Add egg yolk mixture to the almonds with zest and mix well.

Add the juice from the orange and brandy if desired.

Fold the egg whites into mixture.
Grease baking tin and pour mixture into tin.
Bake for 50 minutes at 170’C.

When cake is done and cool, place a paper cut-out of a Cruz de Santiago on top of cake.

Sift a layer of icing sugar over the cake, carefully remove cross.
