Squid Salad
Ingredients list for 1 person

1 medium fresh squid

1 spring onion

6 cherry tomatoes

Parsley

Salt & Pepper

Sensational and never disappointing dish.

Recipe:

Either buy the squid prepared or prepare it your own. Cut the head off, wash and slice the head into desired cooking pieces and set aside. Remove everything out of the tube and discard. Scrape and wash the tube, then slice to desired cooking pieces.

Take a frying pan and bring to hot heat and add some olive oil.

Half the cherry tomatoes and add them to the frying pan. Clean and slice the spring onion and add to the pan.

Cut the squid into slices and add to the pan. Fry the squid at high temperature for a few minutes only.
Just before serving, add a splash of white wine and give it a final stir. Plate the squid and sprinkle with some parsley, salt and fresh ground black pepper.

Chefs Tip

The squid should be cooked very quickly at high temperature, otherwise it can turn out with a rubbery texture.

You can vary this basic recipe by serving the squid with fresh avocado slices and using fresh lime juice to sprinkle over the avo and squid.

Menu suggestion

Perfect as a starter or sharing tapa dish. Serve with homemade bread.

Wine suggestion

A white Rioja would be fabulous.
