6 large fresh scallops
Coconut oil
Butter, unsalted
Salt
Pepper

Scallops

Scallops are one of the ultimate seafood treats.

Recipe:

Pat the scallops dry with a kitchen paper and then sprinkle with sea salt.

Place a large enough skillet on the hob and heat up until very hot.

Add some coconut oil (or any other oil with high smoke point) and drop the scallops into the frying pan.

Sear for about 2 minutes and then turn over to sear the other side. After about 1 minute add some butter to the pan. Let the butter melt and then start spooning the melted butter over the scallops. You can take the pan off the hob and continue spooning butter over the scallops for about another ½ minute.

Place on plates, sprinkle with a little black pepper and serve immediately.

Chefs Tip

You can place the scallops on a bed of salad and drizzel with some thick balsamic vinegar to make a great looking starter.

Menu suggestion

Best to use it as a starter or part of a taps night. 

Wine suggestion

Some nice white wine, although a dry rose would go perfectly well as well.
