Pat the scallops dry with a kitchen paper and then sprinkle with sea salt.
Place a large enough skillet on the hob and heat up until very hot.
Add some coconut oil (or any other oil with high smoke point) and drop the scallops into the frying pan.
Sear for about 2 minutes and then turn over to sear the other side. After about 1 minute add some butter to the pan. Let the butter melt and then start spooning the melted butter over the scallops. You can take the pan off the hob and continue spooning butter over the scallops for about another ½ minute.
Place on plates, sprinkle with a little black pepper and serve immediately.
