Mung Dal
Ingredients list for 4 persons

250g mug dal

2 tomatoes

2 chillies

½ tbs turmeric

½ tbs salt

½ tbs pepper

1 tbs coriander

½ lemon

Lime zest

Bay leaves

4 garlic cloves

1 tbs cumin seeds

¼ tbs cardamom seeds

Fresh coriander for decoration

Mung Dal

Creamy and delicious curry dish.

Recipe:

Wash the dal three times and then rinse.
Cover with water and, bring to boil then simmer for 15min.

Meanwhile chop tomatoes and chillies. Crush the garlic.

Add the tomatoes, chillies and spices (turmeric, salt, pepper, coriander).
Add the juice of ½ a lemon and add some lime zest and a few bay leaves.
Mix and simmer for another 10min.

In a different pan heat some butter.
Add garlic, cumin and cardamom seeds.
Fry for a few minutes or until garlic is golden.
Add to the dal mix and stir well.

Remove bay leaves if you have used them, final stir and serve.
If you have, sprinkle some fresh coriander on top.

Chefs Tip

Serve with fresh coriander to get the most out of it.

Don’t let it dry out; add some more water if necessary.

Menu suggestion

Lovely dish as a vegetarian main with boiled eggs or as a side to any curry dish.
Will be a hit at any BBQ or party as well.

Wine suggestion

Both red or white will go but why don't you try a cider with this one?
