Lemon infused Basa Fillets

2 Basa fillets

1 Organic lemon

½ Round lettuce

2 Radishes

Olive oil

Salt

Chilli powder

Ginger powder

Dried lemon balm

Extra virgin olive oil

Balsamic vinegar

Lemon infused Basa Fillets

Turn bland Basa fillets into wow.

Recipe:

Let the fish fillets infuse for at least an hour prior to frying them.

To prepare the fish fillets brush them with olive oil, then sprinkle some chilli, ginger and salt over the fillets. Now add a generous amount of dried lemon balm and rub into the fish fillets. Do this on both sides. If you don’t have lemon balm, you can use lovage or oregano. Now wash and slice the lemon and put the lemon slices on top of the fish fillets. Cover with cling film and leave to infuse for an hour in the fridge.

To fry the fish, take a skillet which is large enough to hold both fillets, add some oil and heat to medium-high temperature.

When the oil is hot, add the fish fillets and place the lemon slices around the two fish fillets. Cook until golden brown for about 2 minutes, then turn the fish fillets and continue frying until golden brown on the other side. Turn the lemon slices as well and fry them on the other side.

Transfer the fish fillets to a plat and place the fried lemon slices on top and let the fish rest for a few minutes.

In the meantime, prepare the salad. Take some leaves from the round lettuce, wash and pad them dry. Now place them on a plate and dress the salad with extra virgin olive oil and balsamic vinegar. Mix well and then transfer and arrange the salad next to the fish fillets. Wash, trim and slice the radishes and sprinkle over the salad and serve.

Chefs Tip

Fried lemon slices are actually tasting very nice but make sure you use organic lemons
