Fried Pear, Stilton & Walnut Salad
Light & nutty with pungent blue cheese.
Recipe:
I use fresh in season pears but you can use tinned pears if you with.
Cut the pears in slices and remove the core from the inner slices. Fry the slices on medium to high heat in some butter for 5-6min on each side or until slightly browned. In the meantime, arrange and dress the salad on the plates. I used watercress, spinach and rocket salad, but you can use whatever salad you wish. For the dressing I used walnut oil and lemon but again, feel free to use your preferred dressing.
Once the pears are ready, arrange them on the salad. Cut the stilton in slices and crumble over the top of the pears. Crush the walnut halves and then sprinkle over the salad. Finally drizzle some sweet fig balsamic glaze over.
Chefs Tip |
If you use fresh pears, make sure they are ripe. Alternatively use tinned pears.
Don’t overpower the salad with stilton, use less cheese if you are new to blue cheese. |
