500g courgettes

500ml full fat milk

00 flour

Salt

Vegetable oil

Courgette Fries

Great alternative to standard fries.

Recipe:

Wash, trim and cut the courgettes into thin fries. Place the strips into in the milk and set aside in the fridge for at least 2 hours.

After two hours drain the courgette fries and place in a large bowl. Sprinkle over some 00 flour and mix until the slices are lightly coated with flour.

Fry in plenty hot vegetable oil until golden. Drain on kitchen paper, season with a pinch of salt and serve.

Chefs Tip

Don't skip the milk marinade or you will be disappointed.

Menu suggestion

Serve with some tapas or as an alternative to standard potato fries.

Wine suggestion

Dry white wine.
