Chicken Skewers
Ingredients list for 6 skewers

6 chicken fillets

6 chillies

6 cloves of garlic

2 lemons

4 tbsp parsley

2 tbsp balsamic vinegar

2 tbsp soy sauce

6 tbsp extra virgin olive oil

1 tbsp smoked paprika

1 tbsp oregano

1 tbsp brown sugar

1 tsp salt

Chicken Skewers

Wonderful, juicy and flavourful kebabs.

Recipe:

Spicy and smoky chicken skewers will be good for any party or as a main. Just make sure you have a dipping sauce with it.

Trim and slice the chillies. Peel and grate the garlic. Half the lemons ready for juicing. Chop the parsley and chop the chicken fillets into large chunks.

Take a large bowl and add the juice of the two lemons, olive oil, vinegar, soy sauce, chillies, garlic, parsley, all the spices and sugar. Mix all ingredients to create a smooth, slightly thick marinade. Now place the chicken chunks into the bowl and coat them with the marinade. Cover with cling film and place in the fridge to marinade at least 2 hours, if not overnight.

Before cooking, thread the chicken pieces on skewers. The skewers can be cooked on a bbq or griddle. Slightly oil the griddle if using. Grill the skewers on high heat for about 10-15 min in total, turning them now and them to allow grilling on each side.

Once cooked and nice and golden, transfer the kebabs to a platter and serve with some dips, fresh salads and homemade bread.

Prepare and marinate the meat the day before.

Menu suggestion

Serve with fries, vegetables and/or whatever you fancy however you will need a dipping sauce e.g. tzatziki, salsa sauce or honey crème cheese dip.

Wine suggestion

Whatever you are having with your BBQ meal. Beer, wine or a mixer - all will be good.
