Wash & soak the beans in water for the recommended time (packing instructions).
Drain, wash and add to a pot with cold water.
Bring to the boil and reduce heat to medium.
Add three tomatoes, two potatoes and one onion. Add one full garlic bulb (no need to peal).
Add one sprig of celery, rosemary, thyme and bay leaves.
Add all the spices.
Simmer for approximate 50min, add water if required.
Remove the rosemary, thyme and bay leaves.
Remove the celery, potatoes, tomatoes, onion and garlic. Squeeze the garlic out the bulbs and mash up with the potatoes, onion, celery and tomatoes with quite a big slash of olive oil, some vinegar, salt and pepper.
Add this mash back into the bean stew and stir well.
Serve with some chopped parsley and some pitta bread.
